Pumpkin Banana Muffins

This recipes makes 12 large fluffy muffins that will melt in your mouth! They are the perfect blend of spices, with the right amount of sweetness.

Cooking Time: 20-25 minutes

Serves: 12

Serving Size: 1 muffin

    • 2 medium bananas, mashed (about 215g)

    • 1/4 cup butter, softened

    • 1/2 cup brown sugar

    • 2 tbsp maple syrup 

    • 1/2 can pumpkin puree

    • 1 tsp vanilla

    • 2 large eggs

    • 1 1/2 cup gluten-free 1-1 flour 

    • 1 1/2 tsp baking powder

    • 1/2 tsp baking soda

    • 1/2 tsp salt

    • 1 tbsp pumpkin pie spice

    • 2 tsp cinnamon

    • 1/16 tsp ground cloves

    • Optional: ½ cup semi sweet chocolate chips

    1. Preheat the oven to 350°F.

    2. Spray a 12 cup muffin pan with cooking spray. I recommend these silicone pans so the muffins don’t stick.

    3. Mash the bananas in a large bowl or stand mixer.

    4. Add the softened butter, brown sugar, maple syrup, pumpkin, vanilla, and eggs. Mix together. 

    5. Add the rest of the ingredients. Mix together. 

    6. Pour the batter into the muffin pan. 

    7. Bake for 20-25 min. 

    8. Store in the fridge for up to 2 weeks or freeze in a ziplock bag.
