Cottage Cheese Protein Pancakes for 1
Besides the fact that these are absolutely delicious, the other amazing thing about these pancakes is that you get to eat all of them! One serving packs 25 grams of protein and only 266 calories!

Serving Size: 4 (ish) thin pancakes

1/3 cup oats
1/4 cup egg whites
1 egg
1/3 cup low-fat cottage cheese
1/2 tsp vanilla
1/2 tsp baking powder

Preheat your skillet or electric griddle to medium heat (300 degrees F).
Blend all of the ingredients together using a blender for about 30 seconds until smooth.
Pour the batter into nonstick skillet. Cook on each side for 1-3 minutes depending on your skillet/griddle.
This makes 4 (ish) medium size thin pancakes. Feel free to make them smaller. I don’t recommend making fewer larger pancakes, because they will be difficult to flip over.
Topping options: butter, peanut butter, maple syrup, fresh sliced bananas, granola, etc. My favorite is sliced banana, drizzled peanut butter, maple syrup and my homemade granola.
