Breakfast Pizza
Pizza for breakfast?! Absolutely! I could eat pizza for every meal. I love using Sami’s Bakery Millet and Flax Lavash for this because they are gluten free, have tons of fiber, and the edges get super crispy!

1 Tortilla - I love using Sami’s Bakery Millet and Flax Lavash because they are gluten free and have tons of fiber!
1 large egg
1/4 cup egg whites
1/4 low-fat cottage cheese
Chopped peppers, onion, mushrooms
1 ounce chopped ham - I used leftover spiral sliced honey ham from Easter (or sausage, bacon)
1 tbsp feta cheese
Salt, pepper
Hot honey
Red pepper flakes

Preheat your air fryer or oven to 400°F.
Saute the veggies and ham in a non stick pan sprayed with cooking spray.
Add the egg, egg whites and cottage cheese to a bowl and whisk together.
Spray a dish that is smaller than your tortilla so the sides of the tortilla stick up to create a rim to keep the eggs contained.
Add the veggies and ham. Sprinkle the feta cheese on top. Add salt and pepper.
Cover the dish with foil to keep the top from getting too brown.
Air fry or bake for 20 minutes. Take the foil off for the last 5-10 min to get the top and edges crispy and lightly brown.
Add hot honey and red pepper flakes on top for a little extra flavor and kick!
Use a pizza cutter to slice into 4 slices. Pick up and eat like pizza!
