Single Serving Broccoli Chicken Pizza Crust

I was solo one night and pizza sounded so good, but I also wanted to use the shredded chicken and broccoli that I meal prepped so I came up with this healthy high protein pizza using both! I LOVED it! Not only was it super flavorful, but the pieces were firm when I picked them up like real pizza! Huge win!


Prep Time: 20 minutes

Cooking Time: 20 minutes

Serves: 1

Serving Size: 4 little slices - 1 pizza

    • 3 oz cooked broccoli

    • 3 oz cooked chicken breast

    • 1 egg

    • 1/8 cup nutritional yeast

    • 1/8 cup shredded mozzarella cheese

    • 1/2 tsp Italian seasoning

    • 1/2 tsp garlic powder

    1. Preheat the over to 400°F.

    2. Using a food processor, combine all of the ingredients.

    3. Place parchment paper on a baking sheet.

    4. Add the broccoli chicken mixture on top and shape into a circle. Flatten to about 1/2 inch thick.

    5. Bake for 15 min. Flip over and bake for another 6-8 minutes.

    6. Add desired toppings and bake for 8 more minutes. I added pizza sauce, a little mozzarella cheese, pepperoni, mushrooms and red pepper flakes.
