Magic Muffin

I’ve made a few versions of a Magic Muffin, and I am proud to say that this is THE best version! It’s higher protein, less fat, less calories all with a softer texture! Mix it, cook it, slice it, toast it and you’ve got yourself a wonderful muffin for breakfast sandwiches, deli sandwiches, avocado toast, peanut butter and jelly…the options are endless! I love making a killer breakfast sandwich with it! Eggs, bacon, strawberry jam and some red pepper flakes - YUM!


Prep Time: 5 minutes

Cooking Time: 90 seconds

Serves: 1

Serving Size: 1 muffin

    • 3 tbsp liquid egg whites

    • 1 tbsp nonfat plain Greek yogurt

    • 3 tbsp flaxmeal

    • 1/4 tsp baking powder

    • Pinch salt

    1. Use a mug or ramekin with a wide base. I have a large Starbucks coffee mug perfect for this.

    2. Spray the inside of the mug with cooking spray. 

    3. Add the egg whites and Greek yogurt. Whisk together. I like to use a frother for this to get it smooth.

    4. Add the flaxmeal, baking powder and salt. Combine well.

    5. Scrape down the sides so that the mixture lays flat (ish). Let the mixture sit for 1–2 minutes. 

    6. Microwave for 90 seconds.

    7. Cool for 5 minutes.

    8. Using a knife, scrape around the muffin to separate it from the mug. Slice in half and toast.

    9. I love making a killer breakfast sandwich with it!
