Giant Fluffy Greek Yogurt Pancakes

These giant fluffy pancakes give you the feel of going to your local diner, but enjoying the fact that these are so incredibly healthy AND delicious!

Cooking Time: 6 minutes

Serves: 3

Serving Size: 3 large pancakes

    • 2 large eggs

    • ½ cup egg whites

    • 1 cup nonfat greek yogurt

    • 1/2 cup unsweetened almond milk

    • 1/2 tbsp vanilla

    • 1 cup gluten free flour

    • 1 ½ tsp baking powder

    • 1/4 tsp baking soda

    • 1/4 tsp salt

    • Optional mix-ins: blueberries, chocolate chips

    1. Heat the skillet or electric griddle on medium heat.

    2. Whisk together the wet ingredients. 

    3. Add in the dry ingredients and mix until combined. If the batter is too thick, add more almond milk or water. 

    4. Add in the mix-ins (optional): blueberries, chocolate chips

    5. The length of cook time will depend on your burner/skillet/griddle - approximately 2-3 minutes on each side. Also depending on the type of pan you are using, you may need to spray with cooking oil or rub with some coconut oil so the batter doesn’t stick. 

    6. Serve hot with whatever you’d like! Butter, syrup, peanut butter, granola, sliced bananas,  strawberries…

    7. Make a double or triple batch in order to eat all week long or store the freezer for the future. Freeze on a sheet pan with the pancakes laid out flat (not overlap). Once they are frozen, then you can add them all to a freezer safe container or ziplock bag.
