Honey Oat Bread
What’s the best thing since sliced bread? This honey oat sliced bread! It might be my husband’s favorite thing that I make.
Prep Time: 20 minutes
Cooking Time: 50 minutes
Serves: approximately 15
Serving Size: 1 slice

2 1/3 cup gluten free 1:1 flour
¾ tsp xantham gum
2 ½ tsp baking powder
1 tsp salt
1 cup plain Greek yogurt
1 large egg
¼ cup honey
¼ cup unsweetened applesauce (or coconut oil)
1 cup rolled oats
¾ cup unsweetened almond milk

Preheat your oven to 375°F.
Spray a silicon bread pan with cooking spray. I highly recommend getting at least 1 of these silicone pans! Nothing sticks to them! You can also line a bread pan with parchment paper.
In a large bowl, mix the flour, xantham gum, baking powder and salt together.
In another large bowl, mix the yogurt, egg, honey, applesauce/oil, oats, and almond milk together.
Add the flour mixture to the yogurt mixture. Mix until combined. Don’t over mix.
Pour the batter into bread pan.
Sprinkle the top with 2 tbsp oats.
Bake for 40 min, cover with foil, bake for 10-20 more min until done. Stick a knife in the middle to check to see if it’s done. If the knife comes out clean, it’s ready! If there is batter still sticking to it, it needs more time. Keep it covered so the top doesn’t get too brown.
Let cool for at least 15 minutes before slicing.
Enjoy some hot and fresh. Then let the bread cool completely, slice into a total of 15 thin slices.
Store in the refrigerator in a ziplock bag or airtight container for up to 1 week.
I like to slice and then freeze so I can pull out a slice whenever I want one!
