Health "ier” Buckeyes
Every Ohio State Buckeye fan knows and enjoys a good buckeye. This classic peanut butter and chocolate candy is made to resemble the nut of the Ohio buckeye tree — traditionally a rich mixture of peanut butter, butter, and powdered sugar dipped in chocolate, with just a small circle of peanut butter left showing on top.
These are all the nostalgic, chocolate-dipped peanut butter goodness you remember — just made even better with natural peanut butter, maple syrup, almond flour, and dark chocolate.
They’re sweet, salty, and perfect for holidays, game days, or anytime you want a treat that feels indulgent but a little more balanced.
Time: 3 hours
Serves: approximately 16
Serving Size: 1 Buckeye peanut butter ball
-
For the peanut butter balls:
¾ cups natural peanut butter (I like Teddie’s Natural Chunky)
¼ cup maple syrup
½ tsp vanila
5 tbsp almond flour
½ tsp sea salt
For the dipping chocolate:
1 cup dark or semi sweet chocolate chips
1 tbsp coconut oil
Sea salt (sprinkled on top)
-
Using a stand mixer, combine the peanut butter ball ingredients.
Place wax paper on a baking sheet. Roll the mixture into balls and place on the sheet.
Stick a toothpick in each ball. Place in the freezer for 1-2 hours. *This makes the chocolate dipping part so much easier!
Melt the chocolate & coconut oil in a saucepan on low heat until smooth. Dip each ball in the chocolate leaving the top without chocolate.
Optional: Sprinkle with sea salt. 🤗 The sweet and salty combo is AMAZING!
Place back in the freezer for 1-2 hours.
Store in an airtight container in the fridge or freezer. I keep mine in the freezer.
