Simple Family Favorite Meatloaf
Seriously, EVERYONE in the family loves this meatloaf. And it’s SOOO easy to make! With only a few ingredients and a few minutes, you’d got the most delicious dinner in the oven.
Prep Time: 15 minutes
Cooking Time: 45-50 minutes

Serving Size: 1 slice

Preheat your oven to 375°F.
Line a sheet pan with foil.
Spray it with olive oil spray.
In a large bowl, mix your ingredients (with only 1 cup salsa) really well. Using your hands works best.
Form into 2 rectangles or loaf shapes on the sheet.
Spread 1 cup of salsa on top.
Bake at 375 45-60mins. Use a meat thermometer to check to see if it’s done - 165°F
Broil for 3-5 minutes to make the top crispy.
Serve with roasted broccoli and a baked sweet potato and you’ve got the perfect healthy feel good dinner!
Be sure to make a double or triple recipe, because the leftovers are AMAZING! I like to re-heat a slice in a skillet with coconut oil on the stove…it gets a crispy edge on both sides. Absolutely delish!
