Simple Family Favorite Meatloaf

Seriously, EVERYONE in the family loves this meatloaf. And it’s SOOO easy to make! With only a few ingredients and a few minutes, you’d got the most delicious dinner in the oven.


Prep Time: 15 minutes

Cooking Time: 45-50 minutes

Serves: 8

Serving Size: 1 slice

    • 2 lbs 85/15 ground beef (can also use ground turkey, but it’s so much better with ground beef)

    • 1 cup oats 

    • 2 cups chunky salsa, divided (1 cup to mix in, plus 1 cup for the top)

    • 1 tsp salt

    • 1/2 tsp pepper

    • 1 egg

    • Optional add ins: any chopped veggies you like (spinach, onion, mushroom, peppers)

    1. Preheat your oven to 375°F.

    2. Line a sheet pan with foil. 

    3. Spray it with olive oil spray. 

    4. In a large bowl, mix your ingredients (with only 1 cup salsa) really well. Using your hands works best. 

    5. Form into 2 rectangles or loaf shapes on the sheet.

    6. Spread 1 cup of salsa on top.

    7. Bake at 375 45-60mins. Use a meat thermometer to check to see if it’s done - 165°F

    8. Broil for 3-5 minutes to make the top crispy. 

    9. Serve with roasted broccoli and a baked sweet potato and you’ve got the perfect healthy feel good dinner!

    10. Be sure to make a double or triple recipe, because the leftovers are AMAZING! I like to re-heat a slice in a skillet with coconut oil on the stove…it gets a crispy edge on both sides. Absolutely delish!
