These Reese’s Bites are made with just four simple ingredients and give you that sweet, chocolatey peanut butter fix in a healthier little bite. They’re easy to make, easy to keep on hand in the fridge or freezer, and perfect when you want something sweet after a meal—or just because.
Time: 1 hour
Serves: approximately 12
Serving Size: 1 Reese’s Peanut Butter Bite
-
100g powdered peanut butter (PB2 powder) - approximately 1 cup
130g unsweetened apple sauce - approximately 1/2 cup
70g semi sweet/dark chocolate chips
1 tsp coconut oil
optional: flaky sea salt
-
Make the filling: Mix the powdered peanut butter and applesauce until a smooth, thick dough forms.
Roll + chill: Divide the mixture into 12 equal portions and roll into balls. Place on a parchment-lined plate or tray and freeze for 60 minutes.
Melt the chocolate: Add the chocolate chips and coconut oil to a small saucepan. Heat over low heat, stirring frequently, until melted and smooth.
Coat: Dip each chilled peanut butter ball into the melted chocolate, turning to coat. Place back on the parchment-lined plate or tray.
Optional: Sprinkle each bite with a little flaky sea salt before the chocolate sets.
Set: Return to the freezer until the chocolate is firm.
Store: Keep in the refrigerator for up to 1 week or in the freezer for up to 4 weeks—if they last that long!
