Bakery Style Healthy-But-Craveable Pumpkin Muffins
These are soft, warmly spiced pumpkin muffins with enough sweetness to feel like a treat, while Greek yogurt, applesauce, and pumpkin help keep them moist and a little lighter than a traditional bakery-style muffin.

Preheat oven to 400°F. Lightly spray a 12-cup muffin pan. I recommend these silicone muffin pans: https://amzn.to/41fdqy2.
In a large bowl, whisk together the pumpkin, eggs, melted butter, applesauce, Greek yogurt, vanilla, brown sugar, and maple syrup.
In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
Add the dry ingredients to the wet ingredients and gently stir just until combined. Do not overmix.
Let the batter sit for 10 minutes.
Fold in the chocolate chips, if using.
Divide the batter evenly among the 12 muffin cups.
Bake at 400°F for 5 minutes.
Without opening the oven, reduce the temperature to 350°F and bake for 12 more minutes.
Remove from the oven and let the muffins cool in the pan for 5–10 minutes, then transfer to a cooling rack.
