Heavenly Hunk Bars

A homemade take on Heavenly Hunks — soft, oat-based, and lightly sweet with simple, real ingredients. These are easy to make, easy to portion, and a healthier option that fits into real life, not works against it.

    • ½ cup coconut oil  

    • ½ cup honey  

    • ¼ cup unsweetened applesauce  

    • 1 tbsp maple syrup 

    • ½ tsp vanilla  

    • ¾ cup oat flour  

    • 4 cups rolled oats  

    • ¾ cup unsweetened shredded coconut, lightly toasted  

    • ½ cup arrowroot powder  

    • 2 tbsp coconut flour  

    • ¼ cup chicory root fiber (inulin)  

    • ½ cup coconut sugar  

    • ½ tsp salt  

    • ½ tsp cinnamon

    • 1 cup mini chocolate chips  

    1. Start by toasting the shredded coconut. Preheat the oven to 325°F. Spread shredded coconut on a baking sheet lined with parchment paper and toast for 3 minutes, stir, and an additional 1-2 minutes until lightly golden. Let cool.

    2. In a large bowl combine the dry ingredients: oat flour, rolled oats, toasted coconut, arrowroot powder, coconut flour, chicory root fiber, coconut sugar, salt, and cinnamon. Stir well.

    3. In a saucepan over low heat, melt coconut oil and honey. Remove from heat and whisk in applesauce, maple syrup (if using), and vanilla.

    4. Pour the wet ingredients over the dry ingredients. Mix together gently until combined. Don’t over-mix. Let this mixture cool before adding in the chocolate chips, otherwise, the chocolate chips will melt.

    5. Fold in the chocolate chips.  

    6. Let the mixture sit for 5–8 minutes to allow oats and fibers to absorb moisture.

    7. Line a 9×13 pan with parchment paper. Press the mixture firmly but not too tightly packed (this helps create a soft texture).

    8. Freeze for 45–60 minutes until set.

    9. Remove from the freezer, let sit 5 minutes, then cut into “hunks” (little squares or bars).

    10. Store in an airtight container in the refrigerator or freezer.
